Overview
The Mango Puree Processing Line is a specialized industrial system designed to extract high-quality pulp and puree from fresh mangoes. This line is essential for producers of mango juice, nectar, smoothies, baby food, ice cream, yogurt, and bakery fillings. Mangoes are highly perishable fruits with a short harvest season. A dedicated processing line allows you to convert fresh mangoes into stable, shelf-stable puree that can be stored for 12 to 24 months, enabling year-round production of mango-based products.
Our mango puree processing line handles the complete workflow from fruit reception, washing, sorting, blanching, pulping, refining, deaeration, sterilization, to aseptic bag filling. Mango processing presents unique challenges compared to other fruits. The fibrous nature of mangoes requires powerful pulping equipment with specially designed blades and screens. Our line uses a two-stage pulping and refining system that efficiently separates the pulp from fibers and skins, producing a smooth, consistent puree with excellent mouthfeel. The first stage uses a coarse screen with 1.5mm to 2.5mm openings to remove fibers, while the second stage uses a finer screen of 0.8mm to 1.0mm for a silky texture.
Color preservation is critical for mango puree, as oxidation can quickly turn the product brown. Our processing line incorporates a blanching unit at the beginning of the line to inactivate enzymes that cause browning. Following pulping, a deaeration system removes dissolved oxygen from the puree, further protecting color and flavor during subsequent thermal processing.
The sterilization system uses high-temperature short-time technology to eliminate spoilage microorganisms while preserving the natural mango aroma and nutritional content. The aseptic bag filling system fills the sterilized puree into pre-sterilized bags ranging from 5kg to 220kg, typically placed inside drums or bins. This packaging method allows the puree to be stored at room temperature without refrigeration, significantly reducing cold storage costs.
Processing Stages
Fresh mangoes are first washed in a bubble washing machine that removes dirt and field debris. Workers manually sort the mangoes on an inspection conveyor, removing unripe, overripe, or damaged fruits. A blanching unit then subjects the mangoes to hot water or steam for a short period, which softens the fruit and inactivates browning enzymes.
After blanching, mangoes pass through a pulping machine that separates the pulp from the skin and pit. The extracted pulp then enters a refiner where finer screens remove remaining fibers and create a smooth puree. A vacuum deaerator removes trapped air bubbles, preventing oxidation and improving the product's appearance. The puree is then sterilized in a tubular or scraped-surface heat exchanger before entering the aseptic buffer tank. Finally, the sterile puree is filled into aseptic bags and sealed automatically.
